Shrimp Tempura

Ingredients

½ cup AP flour

½ cup corn or rice flour

1 tsp baking powder

½ tsp salt

1 egg yolk

cup ice cold water (or soda water)

Panko bread crumbs

oil for deep frying

Shrimp, shelled and deveined, tails on.

Directions

Heat oil to 350°
Beat eggs with water, sift in dry ingredients
Dip shrimp in mixture then roll in panko
Add to oil and fry until golden, 1 to 2 minutes.
